Kick back and enjoy some NZ hospitality in Cardrona's custom-built cabins
Growing up in South Africa I was exposed to a variety of wild and exotic foods. A passion for cooking developed whilst holidaying on the south coast. Dad would catch the fish and I would cook it.
I went on to study catering management and undertook an apprenticeship at the Durban Hilton hotel. I learnt more about food and was fascinated by products like ostrich and crocodile.
Moving to New Zealand in 2005 I continued to work in kitchens. A head chef in Arrowtown and then in Wanaka. In 2007 I won the Monteiths wild food competition with a trio of curries; including thar, eel and wallaby.
Now living in Lake Hawea I have the opportunity to enjoy the beautiful outdoors and all its fantastic trails and tracks. I continue to enjoy cooking seasonal fresh produce, complimenting locally hunted meats and New Zealand grown vegetables.
